Les Enseignères is the most reputed climat producing Puligny-Montrachet village wines. It owes its popularity to its exceptional geographic situation and geology, similar to the neighbouring Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet. It is planted amongst clay-limestone soils with an average vine age of 65 years. Vigneron and winemaker Romaric Chavy began formal wine training in his native Burgundy aged just 12. Over the subsequent three decades, the prodigy has mastered his craft, using the lutte raisonee methodology to achieve his pursuit of ultimate terroir definition. Reflective of Romaric’s self, the bottlings crafted at Domaine Chavy-Chouet are full of the same personality, sensitivity, and uncompromising character that define their creator.

Tasting Notes :
Notably more elegant aromas feature notes of exceptionally pretty white orchard fruit, citrus blossom and carnation along with a hint of just sliced fennel. The beautifully textured middle weight flavors possess much better density on the bitter lemon-inflected finale. This could use better depth, but more will almost certainly develop with a few years of keeping.
