Description
The soil that is the basis for this white Roquefort consists mainly of lime and clay. The vines (85% sauvignon blanc and 15% sémillon) have an average age of 25 years and the vineyard had been converted to organic production. In the cellar, fermentation takes place at low temperatures, the skins with their own yeasts play an important role in this. This contributes to a more natural wine with a good structure. The baby wine matures in stainless steel tanks.
Tasting Notes :
Intense, very aromatic bouquet with a mixture of floral hints of jasmine, hawthorn and lemon blossom. Full of fruit on the palate – mandarin, pear, lychee, pineapple… Lots of body and length with this wine which fills the palate. Wonderful combination of sweetness and liveliness. A very successful vintage.
