Palliser Estate, located near the Cape Palliser of the same name, is one of the pioneers of the Martinborough region and also one of the larger producers with 85 hectares. The vineyards are planted on the high Martinborough Terrace, which is considered the most beautiful terroir in the region. The chardonnay grapes are harvested in the cool, stony Om Santi vineyard and in the Palliser vineyard. After harvest, the wine ferments in oak barrels with maturation taking place on the yeasts, also in French oak barrels, 20% of which are new.

Tasting Notes :
The wine reveals an array of subtle, seductive aromas, from grapefruit, apple and white peach to hazelnut and almond butter, set against a Fino sherry saline note of fresh sea breeze. The palate is concentrated and densely layered, revealing nutty and mineral details atop a core of pristine stone fruit. A racy, grapefruity acid line and judicious French Oak frame the wine, leading to a rich, hazelnutty finish with a dash of sea salt. The perfect match for roast pork or richer seafood dishes like crayfish bisque and risottos.
