Description
The Blanc de Blancs cuvée, assembled exclusively from the Chardonnay grape variety, is an exception in the range of Philipponnat wines, which has made Pinot Noir its signature. The cuvée of 100% Chardonnay are from the villages of Avenay, Chouilly, Oger, Vertus and Trépail all first press exclusively of Premiers and Grands Crus. Winemaking of traditional vinification avoid any premature oxidation and partial malolactic fermentation for wines in vats and wood (38%) helps to maintain the balance between freshness and vinosity and not to mask the character of the wine or its purity. The champagne is then aged for seven to nine years in order to obtain the greatest complexity of the wine and to bring out the secondary and tertiary aromas, marks of prolonged ageing on lees.
Tasting Notes :
The Blanc de Blancs 2018 cuvée has a light gold colour, sublimated by a fine and abundant head. The fresh and expressive nose reveals aromas of citrus, candied lemon zest and yuzu, enhanced by notes of bergamot. On the palate it is fresh and elegant, with flavours of mirabelle plum and bergamot. The long and persistent finish reveals a beautiful minerality.
