Description
Tellichery pepper is part of the Piper nigrum species, which means it’s a pepper and not a spice. It is carefully harvested by hand when the peppercorns are red and then they are left out to dry in the sun. Black pepper has stronger more intense flavours than white pepper and also has a hotter aftertaste in the throat. This is because it keeps its pericarp where the piperine, which is what makes pepper hot and spicy, is concentrated.
Tellichery black pepper is spicy and woody yet with strong citrus aromas of lemon and grapefruit. The lasting heat of this black pepper is accompanied by a supple scent of humid tropical forests, with sharp fresh notes.
