Description
From the Basque country and Bearn region of the French Pyrenees, this small round of cheese is made from floral sheep’s milk and is matured for a minimum of 6 months. This allows for a creamy, yet firm texture consisting of a complex layering of flavors. Tomme de Brebis is rich and sharp, deep and earthy with delightful undercurrents of grass, butterscotch and nuts. Originating in small farms nestled in the French Pyrenees, Tomette de Brebis is brought to aging caves in Savoie, located in the French Alps for its final stages of preparation where it is continuously turned, brushed and monitored until the cheese-agers deem it ready. This extended process adds to the multitude of flavors bursting from this cheese.
This cheese emits enticing aromas of warm hazelnuts and buttered toast. Its ivory interior gets harder towards the rind, which makes the perfect firmness for pairing with crackers. Tomme de Brebis is often paired with black cherry jam, although any preferred fruit spread will work just as well. A rich white wine complements the aromatic flavors of this Alpine cheese.
