The Albacore Tuna (Thunnus alalunga) is the most prized for its texture and flavour. It ranges in size from 30 centimetres to one meter in length, and weighs between 10 and 15 kilos. It has a long central fin that’s up to two-thirds its size, giving it its distinctive name, “alalunga.”
