Colore is the highest expression of Bibi Graetz dream, from very old vineyards of Sangiovese. Poor soils mixed with sand and stone and high altitude create the perfect terroir for a wine that tells a lot about Tuscany and its ancient taste. Only the best few barrels of the whole production will become Colore. Descending from old nourished Sangiovese vineyards, the vineyards have survived generations, as the trees have rooted deep into the soils to reach buried nutrients and strengthen the crop. The grapes of Colore were handpicked from 2 vineyards: Lamole and Olmo. Each vineyard was divided into parcels and then harvested, ensuring that all the grapes are picked at the perfect ripening point.  At this stage, the Sangiovese grapes were softly pressed and then placed in open-top 225L barriques for the smaller parcels of the vineyards, and in 50hl casks or stainless steel tanks for the larger plots. After the fermentation process, the wines were moved into old barriques and 50hl casks where malolactic fermentation occurred. The wine was aged for around 18 months before bottling.

Tasting Notes :
The subtlety and perfumed nature of this wine is enchanting, offering flowers, orange peel and cherries. Wonderful ripe strawberries, too. Full-bodied, but not over the top, with tannins that are polished and run the length of the wine. It’s tight, but gives you every indication of a terrific wine. You want to drink it now, and you probably should do, because it’s so alluring. Yet it will age beautifully as well.
