Description
Domaine d’Aussière’s top wine undergoes a rigorous selection from the very best hilltop plots. Here, the poor water retention of the shallow sandstone soils makes for very low yields of Syrah and Mourvèdre with small amounts of Grenache and Carignan. A green harvest further restricts yields, resulting in gorgeously concentrated fruit. Fermented in stainless and concrete, 40% of the wine ages for 18 months in 33% new oak barrels sourced from the Tonnellerie des Domaines in Pauillac.
Tasting Notes :
A well-composed, textural, balanced and layered red with aromas of cherries, strawberries, Mediterranean herbs, baking spices, bark and hints of undergrowth. It’s medium-bodied with finely grained tannins and a refined texture. Focused and precise, with a flavourful and elegant finish.
